Here's to doing things a
little differently.

We began handcrafting small-batch spirits in 2008 on the Georgetown waterfront. With only our single column still, we did everything by hand, using local ingredients, traditional West Indies distilling techniques, and a tireless eye for detail.

And we still do to this day. But for us, making outstanding spirits means going beyond tradition, and making improvements along the path to perfection. With adventurous ideas and careful nuance, we recaptured authentic ocean-maturation with our award-winning Seven Fathoms Rum. And more is coming.

It’s our love and enthusiasm for fine spirits that inspires everything we do. And even though we’ve grown, built a new distillery, and added more columns, we’ve never changed a thing. We handcraft each spirit in small, numbered batches as we always have.

Signature drinks

Hutchings’ Bellini

In champagne flute, add:
1 oz Hutchings’ Peach Scnapps
fill with chilled Andreola Prosecco
Garnish with fresh peach slice

Hugh’s Vice

1 oz Governor’s Reserve White Rum
1 oz honey mix (hot water + honey)
1/2 oz H.H. Hutchings’ Peach Schnapps
1/2 oz lime juice
1/4 cup diced fresh pineapple
1/4 cup (packed tight) mint leaves
Blend with 3/4 cup crushed ice

Cayman Sour

1 1/2 oz H.H. Hutchings’ Amaretto
3 oz sour mix
Shake with ice
Add a splash of lemon-lime soda
and maraschino cherries

Catamaran

1 1/2 oz Governor’s Reserve Gold rum
3/4 oz H.H. Hutchings’ Triple Sec
3/4 oz fresh lemon juice
Shake with ice
Serve in a sugar rimmed glass
